- Morcote 00 pizza flour is made using a custom formulation of durum, all-purpose flour and functional enzymes. This flour is finely milled and has higher protein content required to make the ideal pizza crust. It shows outstanding fermentation tolerance, good water absorption and improved stretchability. The dough is easy to shape and gives crispness to the crust of the final baked pizza base.
- This pizza flour is made using a blend of best quality grown wheat varieties from across the world for the characteristics that are right for pizza dough. It is perfectly suited for preparation of any kind of pizza base and can be used for both italian style thin crust pizza as well as american style thick crust pizzas.
- Josef Marc morcote pizza flour is non-fortified, unbleached and non-bromated, our morcote pizza flour is unbleached & contain low protein, which is used by chefs & bakers across the globe.
- Josef Marc morcote pizza flour is low in protein content which increases the nutrient component and aids in giving your pizzas the perfect crust. Pizza flour ferments well and absorbs water in the most appropriate manner which helps in the formation of gluten. Josef Marc morcote pizza flour refers to the amount of mineral content that is left after burning the flour i.e. T55 has about 0.60% 0.65% mineral content & protein content between 12.0% 13.5
